We are looking for an experienced Pastry Chef in the professional pastry field, who is a team leader. You are passionate about ingredients and enjoy serving cakes, desserts and other confections of exceptional standards. Experience in a busy bakery central/manufacturing kitchen is a must - you are used to working in a fast-paced & physically demanding environment . Knowledge of bread-making advantageous.
KEY RESPONSIBILITIES
1. Central Kitchen Operations
You will oversee daily production of pastries, cakes and a variety of baked products including savoury pastries while ensuring consistency in quality and flavour. As head chef, you will work with executive chef in developing new recipes and products.
2. Team Leadership
As a team leader, you will supervise and train pastry staff on baking and finishing techniques. Improving skills of junior team members will be your responsibility. People management will be your key responsibility so delegating tasks effectively and maintaining a positive team environment in the kitchen is essential. You will conduct regular performance reviews and provide updates to management about your team.
3. Costing
You will monitor budgets for your department and control wastage to maximize profitability. You will implement production schedules which maximises efficiency and reduces overhead costs.
4. Quality Control
An important aspect of this role is quality control. As a leader, you will set the standard in the pastry kitchen. It is imperative that you monitor every aspect of pastry production, conduct taste tests and visual inspections of our products and resolve any issues related to product quality.
4. Food Safety Standards
Our company is ISO 22000 certified and maintains a strong safety culture. It will be your responsibility to ensure that the pastry kitchen complies with health and food safety regulations. You will ensure all your team members are trained on hygiene and safety protocols. You will conduct regular audits in the kitchen to ensure that quality is maintained and all workers are aware of safety standards.
ESSENTIAL SKILLS
1. Proven experience as a Pastry Chef in Central / Manufacturing kitchen required.
2. Deep knowledge of pastry techniques and ingredients.
3. Ability to lead and manage a team effectively to maintain consistency of all products.
4. Creativity in developing new recipes and presentation styles.
5. Excellent time management and organizational skills.
EDUCATIONAL REQUIREMENTS
Diploma or Degree in Pastry Arts, Culinary or equivalent experience.
Additional certifications in food safety or management are advantageous.
