Job Description:
Supervise and hand on day-to-day operations in the central kitchen, ensuring food production meets quantity and quality targets.
Prepare and process food items for production, ensure sufficient supply of ingredients for food preparation.
Organize workflow and ensure that employees understand their duties or delegated tasks.
Lead, train, and manage kitchen staff, ensuring compliance with SOPs for food preparation, hygiene, and safety.
Manage inventory, food cost, coordinate with suppliers, and minimize waste through effective stock management.
Conduct quality checks, ensuring all products meet company standards before dispatch.
Maintain accurate records and prepare performance reports for senior management.
Planning, executing and ensuring weekly cleaning schedule.
Any other duties assigned by the management team.
Requirements:
Basic butchery skills of meat and fish is required.
Culinary expertise and relevant experience.
Experience in a central kitchen or high-volume food production environment.
Prior supervisory or management experience required.
Strong leadership skills with ability to manage and motivate a team.
Able to communicate effectively to all levels and receptive to feedback.
Mandarin speaking required for effective communication with certain team members.
Able to work under pressure in a fast paced, dynamic and challenging work environment.
Basic computer skills / Microsoft word & excel for managing kitchen operations and reporting.
