Job Title: Head Chef

We are a Chinese-Western fusion restaurant offering high-quality dishes inspired by both Chinese and Western cuisines. As part of an international brand, the role will require regular reporting to headquarters in China to maintain brand consistency and operational standards.
Key Responsibilities:
1. Menu Execution & Localization
- Implement the standard menu provided by HQ while having the flexibility to adjust up to 10% based on local market demand and ingredient availability (e.g., modifying spice levels, substituting seasonal local ingredients).
- Ensure all dishes comply with Singapore Food Agency (SFA) food safety and hygiene regulations, including clear labeling for dietary requirements such as halal or vegetarian options.
2. Team Building & Management
- Oversee kitchen staff recruitment, training, and management, ensuring compliance with Singapores labor laws and workplace diversity policies.
- Strengthen teamwork and establish Standard Operating Procedures (SOPs) to maintain consistent food quality.
3. Supply Chain & Cost Control
- Work with local ingredient suppliers, prioritizing those certified by SFA/AVA, ensuring both cost efficiency and quality.
- Monitor kitchen operating costs (e.g., food wastage, energy consumption) and optimize purchasing processes to meet profitability targets.
4. Compliance & Quality Control
- Conduct regular inspections of kitchen workflow and equipment maintenance to ensure compliance with Singapores workplace safety and health (WSH) standards.
- Lead food safety training for kitchen staff (WSQ certification required) to minimize risks of non-compliance and potential fines.
Job Requirements:
- Experience & Skills:Minimum 10 years of experience in kitchen management, preferably in chain restaurants.
Experience in Western or Chinese cuisine standardization and familiarity with Singapores local ingredient supply chain and cost structures.
Strong leadership and training skills to ensure smooth team operations.
