Job Description:What's the job?The Assistant / Outlet Manager manage all aspects of one or more food and beverage outlet(s) daily and coordinate special events. Ensure compliance with standards of service and operating procedures.He / she adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.Your day-to-dayFinancial Returns:
  • Actively pursue cost saving measures.
  • Manage wage and beverage cost.
  • Forecasting.
  • Stock control.
  • Analyse food and beverage statistics through point-of-sale system.
  • Work with Supervisor in the preparation and management of the Department's budget.
People:Effectively manage the outlet by ensuring the following:
  • Oversee the implementation of standards as detailed in the departmental standards and procedures manual.
  • Adhere to opening and closing procedures.
  • Adhere to bill paying procedures.
  • Conduct effective shift briefings ensuring all staff are aware of VIPs, special occasions, daily specials; emphasis on upselling certain products; etc.
  • Personally meet and extend farewell to guests.
  • Encourage and motivate staff to provide optimum service during all shifts.
  • Liaise with Sales Manager during tender process to obtain new accounts, Food and Beverage specific.
  • Work with Supervisor on manpower planning and management needs.
Guest Experience:
  • Share recommendations and guest comments to Outlet Chef and Operations Manager to reflect current guest profile.
  • Develop and implement Promotions Calendar for F&B products in outlet.
  • Manage special event concepts.
  • Anticipate market changes and review operations when necessary.
  • Conduct competitor analysis.
  • Create positive publicity opportunities.
  • Manage customer database and utilize effectively.
  • Up-sell property facilities.
Responsible Business:
  • Recycle wherever possible.
  • Demonstrate Awareness of OH&S policies and procedures and ensure all procedures are conducted safely and within OH&S guidelines.
  • Be aware of duty of care and adhere to occupational, health and safety legislation, policies and procedures.
  • Be familiar with property safety, first aid and fire and emergency procedures and operate equipment safely and sensibly.
  • Initiate action to correct a hazardous situation and notify supervisors of potential dangers.
  • Log security incidents and accidents in accordance with hotel requirements.
What we need from you
  • Diploma in Hotel Management, Food & Beverage, or related field
  • 4 years' related experience, including supervisory experience, or an equivalent combination of education and experience
  • Obtained alcohol awareness certification and/or food service permit or valid health/food handler card as required by local government agency
  • Demonstrated ability to interact with guests, colleagues and third parties that reflects highly on the hotel, the brand and the Company
  • Possess problem solving, reasoning, motivating, organizational and training abilities
