All Things Delicious is looking for an experienced Pastry Demi Chef de Partie in the professional pastry field, who is ready to step up. You are passionate about ingredients and enjoy serving cakes, desserts and other confections of exceptional standards. Experience in a Central Kitchen is essential.

RESPONSIBILITIES:

  • Manage the day to day operations of several area in the pastry kitchen like production of cakes and pastries, assembly and preparation of daily catering orders.

  • Checking all daily orders for pastry preparation and delegate the required work to junior staff making sure they are correctly prepared.

  • Assume the responsibility for cleanliness, sanitation and neatness of the Pastry department including dry storage, cold storage areas and designated freezers.

  • Supervise the preparation work of juniors within the team.

  • Assume the responsibility of CDP in his/her absence.

  • Be proactive in creating new cakes, pastries and desserts including new ideas for presentation.

  • Able to plan ahead & organize workload for the team.

  • Supervise the maintenance and cleanliness of all food preparation equipment.

  • Ensure proper product storage, following FEFO system.

  • Perform other tasks or projects assigned by hotel management and staff.

  • Work closely with Stewarding, other kitchens for functions or special events

  • Adhere to kitchen and service standards of the Company and maintain high standards in quality control, hygiene, and health and safety.

REQUIREMENTS

  • Minimum 3 years working experience in patisserie/central kitchen/hotel

  • Knowledge of pastry dough, creams, pastries and bakeries, cake decorations, wedding cakes, ice cream/sorbet is essential.

  • Experience with gluten free baking (breads / cakes) will be advantageous.

  • Ability to work in a fast paced environment.

  • Skills to train junior staff are essential.

  • Good communication skills with good command of English

  • Willingness to learn and ambition to grow

WORKING HOURS

  • 6 days / 44 Hours per week

  • Public holiday and weekends availability

  • Shift work and 7 days rotational roster

  • Overtime pay
