Overview: We are seeking a passionate and driven culinary professional to join the pre-launch team as a Culinary Trainee/Chef. In this role, you will assist in establishing and maintaining the brand’s excellence in service and quality. You will collaborate closely with the team to create the essential protocols and procedures that will ensure a smooth and successful opening, while reporting directly to the Director of Culinary.

Key Responsibilities:

  • Assist Executive Chef in prepping ingredients for cooking that includes portioning, chopping, and properly storing food before service.
  • Weigh, measure, and mix ingredients according to recipes provided by the Executive Chef, using a variety of kitchen utensils and equipment.
  • Wash and peel fresh fruits and vegetables (if necessary) to prepare them for cooking or consumption.
  • Prepare and cook food according to recipes.
  • Serve food (e.g., soup, desserts, sides, entrees) in the appropriate portions and arrange them neatly on dishes, plates, mugs, and bowls, ensuring proper presentation.
  • Ensure that portions are accurate, dishes are properly arranged, and garnishes are applied before serving to guests.
  • Maintain cleanliness in food storage and cooking areas after each shift or service.
  • Prepare foods that require specific handling, ensuring they are cooked at the correct temperatures in accordance with HACCP guidelines.
  • Adhere to personal hygiene protocols to ensure food served is safe for consumption.
  • Comply with food safety and handling protocols and procedures.
  • Report to the Chef when extra assistance is needed during peak hours to ensure optimal guest experience.
  • Verify the quality of food products received from suppliers and notify the supervisor if any items do not meet specifications.
  • Monitor the temperature of appliances and food using thermostats and thermometers. Ensure freezer systems (including fans, drains, and doors) are operating correctly and report any issues to the supervisor.
  • Stay updated on food safety policies and guidelines within the kitchen.
  • Ability to stay productive in fast-paced and physically challenging situations.

Qualifications & Experience:

  • Basic knowledge of food preparation techniques, cooking methods, and kitchen safety protocols.
  • Familiarity with HACCP guidelines and food safety standards.
  • Strong attention to detail, particularly in food presentation, portion control, and maintaining cleanliness.
  • Ability to follow recipes and instructions accurately while using a variety of kitchen tools and equipment.
  • Good communication skills and the ability to work effectively in a team-oriented, fast-paced environment.
  • Strong organisational skills and the ability to prioritise tasks during busy periods.
  • Ability to handle physical demands, including standing for extended periods and lifting heavy items.
  • Basic understanding of personal hygiene practices and food safety.
  • A passion for culinary arts and a desire to learn and grow within the industry.
  • Relevant culinary certification or formal training is a plus, but not required.
