Head Sommelier
Job Responsibilities
• As a Head Sommelier your role is to have a high level of knowledge of wines/sake/cocktails, knowledge in pairing of wines/sakes to food and to be able to upsell to guests.
• Lead and drive the wine program holistically under the F&B Gaming to achieve financial targets & guests satisfaction metrics.
• Identify and establish relationships with key stakeholders such as Paiza Members and VIP hosts, ensuring guests’ wine needs are well taken care of and maximizing sales opportunities.
• Inventory Management - Setting up, maintaining, and establishing physical placement of wine/sake in cellars in an organized and structured manner that is in coordination with the wine & beverage list. Continuously improve wine & sake storage efficiency, eliminating slow-moving products.
• Develop & execute the Paiza Wine initiative under Paiza Lifestyle to offer more meaningful wine experiences to Paiza Members.
• Develop & execute a comprehensive wine & beverage training program for rank & file TMs, ensuring adequate product knowledge and service delivery.
• A role model complying with core values for junior TMs aspiring to be in the Wine Team.
• Ensure communication with the Wine Buyer to maintain sufficient inventory to meet guest demands and operational needs.
Regular maintenance and updating of wine & beverage list to reflect current products and vintages.
• Ensure that there is continuous and adequate feedback being communicated to the management team with regard to guest comments on the scope and content of the beverage list.
• Responsible for maintaining guest expectations and recommending wines/sakes accordingly to ensure guest satisfaction with regard to the wine and sake.
• Responsibility for the correct use and maintenance of glassware and other wine related equipment in the restaurant including but not limited to beverage list covers, ice buckets, decanting equipment, specialty glassware, bar equipment, cheque covers and POS equipment.
• Responsible for maintaining and executing all the special beverage promotions designed to increase beverage sales.
• Maintain and update sales records and report any changes in stock such as vintage changes, shortage of wines and 86’d wines.
• Comply and implement all health and safety requirements.
• To assist in the management of the front of the house and beverage team to ensure the smooth running of the casino F&B operations.
• To maintain Order of Service standards
• To carry out all tasks in a reasonable time frame to ensure the smooth running of the areas.
• Monthly Inventory of Wine, Sake and all related Beverage
Job Requirements
• Relevant qualifications under the Court of Master Sommeliers, WSET or equivalent
• Minimum 5 years of managerial experience in F&B, preferably in fine-dining, Casino establishments and including experience serving as the Head Sommelier / Sommelier of these establishments
• Comply and implement all health and safety requirements
• To manage the Sommelier team to ensure the smooth running of the restaurant
• Maximizing sales opportunities through wine sales
• To be well presented at all times and to represent the external face of the restaurant
• To maintain Order of Service standards
• To carry out all tasks in a reasonable time frame to ensure the smooth running of the areas.
