About the role:

Sushi Head Chef

Plan, organize, control and direct the work of employees in the Kitchen Department while ensuring superior quality and consistency in preparation of all food items.

What you will do:

  • Select, train, evaluate, lead, motivate, coach, and discipline all employees in the Kitchen’s food production area to ensure that established cultural and core standards are met.

  • Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.

  • Assist in the planning and development of menus for the hotel, ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration.

  • Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen

  • Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality.

  • Work harmoniously and professionally with co-workers and supervisors. Communicate with purchasing team and liaise with suppliers for new or special sushi products.

  • Monitoring price and control the quality of sushi products.

What you bring:

  • Minimum of 12 year of culinary experience, preferably in a luxury hotel or Michelin restaurant.

  • Reading, writing and oral proficiency in the English language.

  • Requires a working technical knowledge of Japenese Cuisine including Nobu Restaurant. Working knowledge is generally learned On-the-Job or through a series of professional certifications.

  • Strong leadership and communication skills

  • Must possess a high level of creativity and high quality standards.

  • High attention to detail and a strong work ethic

  • Proficient in utilizing culinary production equipment and tools
